One Pot Chicken Rice, Peas and Corn

Ingredients

About 1/2 kilogram ( about 1 pound) chicken breast, cut into slices
2 tablespoons olive oil
1 small onion, diced
1/2 teaspoon dried garlic powder
1 teaspoon dried mixed herbs
1 1/2 cups long-grain rice, rinsed well
3 to 4 cups water
3-4 tablespoons of soy sauce 
1 cup frozen peas
1/2 frozen corn
Pinch of black pepper

Method

1. Heat the olive oil in a large heavy-bottom skillet over medium-high heat. Add the chicken and cook for 3 minutes on each side. Set aside.

2, In same skillet, cook onions for 2-3 minutes, until soft. Add mixed herbs and garlic powder and mix together.

3. Add the rice to the skillet and then add chicken. Pour in 3 cups of water, with 3 tablespoons of soy sauce mixed in. Stir to mix together. Bring to a simmer. Then reduce heat to low, and cook for 15 minutes, covered.

4. Check the rice. If the rice is soft and the moisture has absorbed, then dinner is ready to serve. If the rice isn't ready and it requires more water, then add another 1/2 cup, with another 1/2 to 1 tablespoon of soy sauce (according to taste). Replace lid and simmer for a few minutes. 

5. When the rice is almost cooked, add the frozen peas and corn to the skillet. Replace lid.

If the rice is cooked but but there is too much liquid in the skillet, uncover the pan and allow to sit for a few minutes.
