Easy Family Fruit Cake

Ingredients

2 cups of self-raising flour

1/2 cup of butter

1 teaspoon finely grated lemon rind

2/3 cup mixed dried fruit

1/2 cup sugar

1 egg

5 tablespoons of milk

Method

Sift the flour into a bowl (or stir flour well with a whisk).

Rub the butter into the flour and then stir in the lemon rind, fruit and sugar.

Mix with a spoon into a batter with the egg and milk.

Pour mixture into a greased, lined cake pan.

Bake for 1 1/4 -1 1/2 hours at 180°.

Leave cake to cool in cake pan for at least 5 minutes, before turning out onto cake rack.
