Ingredients
2 cans of chickpeas
Olive oil
Paprika and cumin
Salt
Method
1. Drain and rinse the chickpeas and pat them dry with paper towel. Remove lose chickpea skins that come off when drying.
2. Line a large baking try with aluminium foil and brush with olive oil and sprinkle with salt.
3. Roast the chickpeas in oven, shaking the trays at regular intervals to move chickpeas about.
4. Remove from oven after 30 minutes and add spices. Then place back in oven for a further 10 minutes, until crisp.
Chickpeas are delicious fresh from the oven but they can be stored at room temperature in a container loosely covered with plastic wrap.
