Vegetable and Mushroom Frittata

Ingredients (serves 4-6)

100g of frozen peas, corn and carrots (2/3 cup)

100g of sliced mushrooms  (2/3 cup)

1/2 cup of cheddar cheese grated

6 eggs

Method

Preheat oven to 200° C (392° F)

1. Grease a non-stick baking pan with oil. Or, line with baking paper.

2. Whisk eggs in a bowl with a pinch of salt and pepper.

3, Place the frozen vegetables, then mushrooms in the baking pan. Pour the egg mixture on top.

3, Sprinkle cheese on top and cook in the oven for 25-30 minutes, until cooked.

Serve with seeded bread.
