Microwave Chips |
Ingredients
3 medium-size potatoes (Desiree potatoes Dutch cream potatoes or red potatoes) washed and scrubbed but with peel left on.
2 teaspoons olive oil
1/4 teaspoon salt
Method
1. Slice potatoes into thin rounds. Add the slices to a bowl containing the oil and salt and toss about to coat evenly.
2. Grease a large microwave-proof plate with olive oil. Arrange a few potato slices in a single layer on the plate and microwave, uncovered, on High until some slices start to brown, 2 to 3 minutes (this can be variable).
3. Turn the slices over and repeat the process for 2-4 minutes, until slices start to crisp and brown at edges, Watch the slices as they cook and rearrange so that they don't burn.
4. Move the cooked chips to another plate and as they cool, they will become crisp. Repeat with the remaining potato slices.
