Lebanese Lentils and Rice, with Caramelized Onions |
Ingredients
1 cup green lentils
½ cup long grain Rice
2 onions
2 tablespoon olive oil
4 cups water
1 teaspoon ground cumin
Salt and pepper to taste
Method
1. In a saucepan, boil the lentils in the 4 cups of water for 10 minutes on medium heat.
2. As the lentils are cooking, cut 1 onion finely and sauté in a saucepan with 1 tablespoon of olive oil until translucent. Add the cumin and cook for another minute, and set aside in a bowl.
3. Slice the other onion into thin slices and cook in a tablespoon of olive oil, in the saucepan, on low heat until golden brown. Stirring often. (these onions will go on top at the end)
4. Wash the rice and add to the lentils, along with the first cooked onion. Add salt and pepper. Reduce the heat to low and cook for 10-15 minutes, covered with lid, until the water has absorbed.
5. Serve warm topped with caramelized onions, pita bread and a salad.
