Lemon Patty Cakes (Cup Cakes)

Ingredients

1/2 cup of softened butter

1/2 cup of caster sugar

1 cup of self-raising flour

1 egg

1/2 cup of milk

1 teaspoon of finely grated lemon zest

Icing

1 1/2 cups of icing sugar

2 tablespoons of lemon juice

Method

1. Preheat the oven to 160°C (320°F). Place patty-cake paper liners in a 24 mini patty cake pan, 

2. In a medium-sized bowl, cream butter and sugar, with an electric mixer, until light and fluffy. Then, add egg and mix well.

3. Add the milk, flour and lemon zest, and beat with mixer on medium, until combined.

4. Drop spoonfuls of mixture, evenly, into the paper cases of patty-cake pan.

5. Cook for 10-15 minutes. (cakes are cooked when skewer comes out clean). Cool on cake cooling rack.

Icing

1. Mix the icing sugar with about 2 tablespoons of lemon juice. Then spread evenly, after cakes have cooled.
