Mini Quiches With Sliced Bread




Ingredients 

Slices of bread (wholemeal)

1/4 cup chopped onion

2 tbsp olive oil (and Pastry brush)

1/2 cup grated carrot (or zucchini, frozen corn, mushrooms, or, experiment)

1/2 cup grated cheese

3 eggs

1/2 cup milk

Pepper

Method

1. Reheat oven to 200 degrees Celsius.

2. Cut the crusts off bread and trim to make a rough circle. Roll the bread slices with a rolling pin, to flatten.

3. Brush some oil onto the inside of a patty cake tin (cup cake)

4. Push bread slices into each cup. 

5. Bake bread cups in oven for about 4 minutes. Don’t allow to burn.

6. While bread cups are baking, add eggs milk and pepper to a bowl and whisk together. Then add onion, cheese and carrot.

7. Pour the egg mixture into the crisp bread cases and put back into oven for 10-15 minutes.
