Quick Vegetable Slice


Ingredients

6 eggs
1 small capsicum, diced
1/2 red onion, diced
1 small finely diced carrot
200 grams cherry tomatoes, halved
1 cup broccoli florets (no stalk)
1 cup grated cheddar cheese
Extra grated cheese for on top

Method

Preheat oven to 200 °C (about 400 °F)


2. Mix the eggs in a bowl using a whisk until well combined.
3. Chop the vegetables and then mix with the cheese and put into greased pan of you choice.
4. Pour the egg mixture over the top of the vegetable combination.
5. Sprinkle with grated cheese
6. Bake in oven for about 35 minutes.
7. Allow to cool in the pan for 10 minutes before serving.
