Spinach and Sweet Potato Frittata (egg pie)


Ingredients

300g baby spinach
2 large onions, thinly sliced
1 sweet potato, thinly sliced
3 garlic cloves, finely chopped
8 eggs, beaten
Salt and pepper, to taste
Extra virgin olive oil
Feta cheese crumbled

Method

Preheat the oven to 180°C.

1. Heat olive oil in a large fry pan on stove top and cook spinach over medium heat until it has wilted slightly. Remove the spinach from the pan and allow to cool.

2. Then add onions, garlic and a tablespoon of olive oil to the pan and cook over gentle heat until softened.

3. Add the sweet potato and the cooked spinach back to the pan and salt and pepper and cook for a few minutes before adding the beaten eggs.

4. Place the pan in the preheated oven for 15-20 minutes or until golden on top.

5. Remove from the oven and turn out onto a large plate. Sprinkle with feta cheese before serving.
