Lemony, Pea and Ricotta Pasta

Ingredients

375g of pasta

2 tablespoons of olive oil

2 cups of frozen peas

1 teaspoon of crushed garlic

2/3 cup of ricotta cheese, crumbled

2 teaspoons of grated lemon rind

1/2 cup of lemon juice

Parmesan cheese

Method

1. cook the pasta in a saucepan of boiling water. A minute before the pasta is ready, add the peas to the water.  

2. Drain the pasta and peas but reserve 1/2 cup of the liquid. Put the pasta and peas in a bowl.

3. Cook garlic in oil, stirring. When ready, add to the bowl of peas and pasta, along with ricotta cheese, reserved cooking liquid, lemon zest and juice. Combine and then serve in bowls topped with Parmesan.
