Eggs With Fried Rice |
Ingredients (serves 4)
3 cups cooked long grain rice (see below)
1 medium onion, chopped
1 teaspoon garlic powder
2 cups frozen mixed vegetables
1 1/2 tablespoons soy sauce
1 tablespoon oil (canola or sunflower)
1 tablespoon curry powder
4 eggs
Method
1. Heat oil using medium heat in a large non-stick frypan. Add onion, and saute until translucent, about 2-3 minutes.
2 Add frozen vegetables to the pan, and cook for a few minutes. Then add garlic and curry powder.
3. Cook the vegetables for a few minutes, until cooked. Add soy sauce.
4. Stir in rice and cook and mix together for a few minutes, until the ingredients are hot. Spoon evenly into bowls.
Fry eggs in a same frypan with a dash of oil and place on top of fried rice dish.

Frozen vegetables often have higher levels of antioxidants, including polyphenols, anthocyanins, lutein, and beta-carotene, than fresh.
Cook Rice
Ingredients (1 cup dry rice makes about 3 cups of cooked)
1 cup uncooked white rice, rinse well
1 1/2 cups water
Method
Add the rinsed rice and water to a saucepan and bring to a boil. Cover, reduce the heat, and simmer for 15 minutes.
Remove from the heat and let it sit, covered with lid, to steam for a few minutes.
