Crustless Sweet Potato Pie With Cheaters Aioli

Ingredients (serves 4-6)

60 ml (¼ cup) olive oil
1 small onion, finely chopped
420 g (14 7/8 oz) Sweet Potato, peeled, thinly sliced
5 eggs
Pinch of salt

Method

1. In a frypan, heat olive oil and cook onion for 2-3 minutes until soft. 

2. Add the sweet potatoes and cook for 7-8 minutes until soft. 

3. Set sweet potatoes aside in a bowl (not the oil). Keep 2 teaspoons of oil and add back to the frypan, set aside.

4. Whisk the eggs with a pinch of salt, then slowly stir in potato mixture. 

5. Over medium heat, put the frypan with 2 teaspoons of oil back on stove and add sweet potato/egg mixture.

6. Reduce heat to low and cook, gently stirring, for 4 minutes or until egg starts to set and base is starting to brown. 

7. Place a large plate over the frypan, then, wearing oven gloves, quickly flip the crustless pie onto plate. 

8. Carefully slide the pie back into pan, using a spatula, and tuck the bottom edges under and cook for a further 3-4 minutes or until set.

Serve sprinkled with chopped parsley (or chives) and Cheaters Aioli

Cheaters Aioli

1 tablespoon mayonnaise
1/4 teaspoon garlic powder
1/2 teaspoon lemon juice

Combine mayonnaise, lemon juice and garlic
