Ingredients (serves 3-4)
1 small onion, sliced
1 medium carrot, thinly sliced
1/2 cup red capsicum sliced into strips
1/2 cup green capsicum, sliced into strips
1 1/2 cups of mushrooms, sliced
2 tablespoon of canola oil
4 eggs
1 teaspoon of garlic powder
1 teaspoon ginger powder
1 tablespoon soy sauce
1 tablespoon chilli sauce
Method
1. In a heavy bottom frypan, cook the eggs in 1 tablespoon of oil. (Cook for 2 mins or until the egg is golden on the bottom and the yolk is set - spoon some of the hot oil from the pan over the yolk). Set aside.
2. In the same frypan, add 1 tablespoon of oil and cook the onion until translucent. Then add carrot and cook for a few minutes, stirring. Add capsicums, then mushrooms and cabbage.
3. Add soy and chilli sauce, garlic and ginger powder. Add a tablespoon of water if required. Stir about as you cook.
4. When cabbage is soft, serve on brown rice with egg on top.
