Cheaters Minestrone Soup

Ingredients
(serves 2)

1/2 tablespoon olive oil
1 medium onion, chopped
1/2 tsp of garlic powder
1 cup of frozen vegetables (peas, corn and carrots)
1 cup tomato pasta sauce
3 1/2 cups of water
1/2 can of cannellini,beans (425 g)
1/2 cup of large dried pasta
Dash of balsamic vinegar
Parmesan cheese, to serve

Method

1. In a saucepan on moderate heat, cook chopped onion in olive oil, until transparent. 

2. Add the frozen vegetables and mix about. 

3. Add tomato pasta sauce, water, garlic powder and balsamic vinegar. Cook until the soup is hot enough to add the pasta. Cook for about 10 minutes until al dente.
