One Pot Pesto Pasta With Chicken, Mushrooms and Spinach |
Ingredients
1 tablespoon oil
2 chicken breasts (boneless skinless) cut into cubes
1 teaspoon garlic powder
2 cups of baby spinach
1 cup of sliced mushrooms
1 1/2 cups milk
3/4 cup basil pesto
1 1/2 cups chicken stock
3 cups large pasta shapes (about 300 grams)
1/4 cup Parmesan cheese
Salt and pepper to taste
Method
1. Heat oil in a large frypan over medium heat and when hot, add the chicken and mushrooms, and cook until lightly browned
2. Add the garlic, salt and pepper and cook 1 minute.
3. Pour in the stock, milk and pesto. When the mixture reaches medium heat, add the pasta, and cook, stirring often. After a few minutes add the baby spinach
4. When most of the liquid has been absorbed, cover with a lid, and continue cooking for about 10 minutes, until pasta is al dente,
5. Mix in Parmesan cheese and serve.
