Cyprus Lentil and Vinegar Soup

Ingredients

1 cup of green Lentils
1 cup of spring onions, finely chopped
1 cup of coriander leaves, finely chopped
1 cup of lettuce leaves, finely chopped
1 carrot, finely chopped.
3 cloves of garlic sliced
1 tbsp of flour
1/2 a cup of vinegar
Salt and pepper to taste

Method

1. Wash the lentils and add them to a large saucepan and cook on low for 45 minutes.

2. Add garlic and coriander, carrot, spring onions and lettuce, all finely chopped, 

3. Simmer the lentil soup for about another 20 minutes on low heat.

4 Dissolve the flour in a small bowl of hot water and then gradually pour it into the soup while constantly stirring.

5. Add the vinegar and salt and pepper and simmer for another 3 minutes.

Serve nice and hot.
