Bran Fruit Loaf |
Ingredients
45g (1 1/2 oz) bran flakes
150 g (5 oz) sugar
150g (5 oz) mixed dried fruit
250ml (8 fl oz) milk
60ml ( 4 tbsp) oil
185g plain flour
1/2 tsp salt
1 tsp mixed spice
45g (1 1/2 oz) of crushed almonds
Dash of vanilla essence
Method
1. In a large bowl, add bran flakes, sugar, fruit, milk and oil and stir to combine. Allow to sit for 30 minutes.
2. Sift flour and baking powder and add to fruit mixture, along with nuts and vanilla. Mix well with a large spoon.
3. Pour mixture into a well-greased cake pan (20x10x6 cm) (8x 4x 2 inch). Bake for 1 hour on middle shelf at 180 ° (350 ° F, gas 4). Check that a skewer comes out clean. Allow to stand in pan for few minutes before turning out on a wire rack.
