Banana Muffins
Ingredients

2 ripe, soft bananas

1 1/2 tablespoons of sunflower oil

1 teaspoon vanilla extract

2 tablespoons of honey

1 egg

110 g self-raising flour

Method (preheat oven to 190 °C = 374 °F)

1. Sift flour into a bowl.

2. Blend the egg, oil, vanilla and honey in a blender.

3.  Mash the banana with a fork and add to egg mixture, in a bowl. Mix to combine with a spoon.

4. Line muffin tin with paper cases and spoon mixture into them.

5. Bake the muffins in the oven for about 8 minutes. Or, until a skewer comes out clean.

6. Cool on wire rack.
