Veggie Burgers

Ingredients (serves 4)

1 can of Four Bean Mix, 420g

1 cup of cooked sweet potato, mashed

1/2 420g can of peas corn & carrots (well drained)

2 tbsp cumin powder

Tsp olive oil

(Microwave your sweet potato in a ceramic bowl with a plate on top, with a drop of olive oil, for 3 minutes, then mix it about and cook for another 2 minutes. If it still isn't cooked, microwave it in 30-second increments)

Method 

1. In the food processor, pulse the bean mix and peas, corn and carrots, until just roughly chopped.

2. Place the mixture into a bowl and add the mashed sweet potato and cumin. Mix together.

3. Shape the mixture into pattties and place on a tray. Refrigerate for 30 minutes.

4. Cook in a non-stick frypan, in a small amount of olive oil, for a few minutes on each side.
