Honey Date Cake

Ingredients

1/12 cups of chopped dates

2 Tablespoons of butter

1/2 cup of honey

1 egg slightly beaten

1 cup of boiling water

1/2 cup of brown sugar

2 cups of plain flour (sifted)

1 teaspoon bicarbonate of soda

1 teaspoon of vanilla

(optional, sprinkle walnuts on top)

Method

1. Put the dates into a bowl and pour boiling water over them.

2. Add butter, sugar and honey and stir together. Allow to cool.

3. When just warm, add the egg and bicarbonate of soda.

4. Add the sifted flour and fold into mixture. Add vanilla and stir in.

5. Bake in moderate oven in 18 cm / 7 inch cake tin, for 40 minutes. 

6. Reduce heat to slow and bake another 20 minutes.

Moderate oven: 180°C (FF, 160°C) (AF, 155°C ) 350-375°F (GM, 4-5)
Slow Oven: 150°C (FF,130°C) (AF, 125°C) 275-300°F  (GM, 1-2 )
