Fast Curried Mince With Sweet Potato and Peas |
Ingredients (serves 4)
1 tbsp (20mL) canola oil
500 g beef mince
1 onion, sliced
2 tablespoons of curry powder
1 cup of frozen peas
1 small sweet potato, cubed
1 x 800 g can whole, peeled tomatoes, roughly chopped
Salt and pepper to taste
Method
Heat oil in a large frypan over medium heat and cook mince and onion for 5 minutes or until browned.
2. Add curry powder, salt, pepper, and cook stirring for 1 minute. Add cubed sweet potatoes and stir well.
3. Add peas and chopped up tomatoes along with the liquid. Reduce heat and simmer for about 30 minutes or until sweet potato is tender.
Serve with long grain rice.
