Cannellini Bean and Tuna Sandwiches

Ingredients (serves 4)

1 x 185g (about 6-ounce) can chunky tuna, drained.

1/2 400g can of Cannellini Beans.

2 tablespoons of good quality mayonnaise.

1 large tomato, thinly sliced

1 cup of rocket (arugula).

 8 slices seeded bread, toasted.

 Pepper optional.

Method 

1. In a bowl, add tuna, roughly mashed cannellini beans, mayonnaise and mix together gently. (and, pepper if desired)

2.  Spread the tuna-bean mixture on half of the toasted bread slices.

3.  Top the tuna-bean mixture with tomato slices, and rocket.

4. Top with remaining slices of bread.
