One Egg Butterfly Patty Cakes

Ingredients

1/3 cup of softened butter

1 1/2 cups sugar

1 large egg

1 3/4 cups all-purpose flour

2 1/2 tsp. baking powder

1/4 tsp. salt

1 cup milk

1 tsp. vanilla

Method

Preheat the oven to 180 °C (about 350 F)

1. In a large bowl, beat the butter and sugar until light and fluffy. Then, Beat in the egg and vanilla.

2. In a smaller bowl, stir together flour, baking powder and salt.

3. Add the dry ingredients to the egg mixture, alternating with the milk and mixing until just blended after each addition. 

4. Pour the batter into patty cake tins lined with paper cup cake cases and bake for 20 minutes. Or, until the cakes are golden and springy to the touch. Cool completely before adding cream.

Makes about 1 dozen patty cakes

Make Butterfly Top

1. Use a knife to cut a 2cm circle from the top of each cupcake.

2. Cut the tops in half and set aside.

3. Spoon one teaspoon of whipped cream on top of each patty cake.

4. Place two halved cake pieces over the cream of each patty cake to create wings.
