Veggie Hash Browns |
2 potatoes
2 eggs
1 carrot
1 zucchini
pinch of white pepper
2 tablespoons of olive oil
Method
1. Break the eggs into a bowl and whisk together.
2. Wash and grate the potatoes and add to the egg mixture.
3. Wash and grate carrot and add to egg mixture.
4. Wash and grate zucchini and add to the egg mixture.
5. Add pepper and mix together with eggs.
6. Heat oil over medium heat in a non-stick frypan.
7. Add spoonfuls of the mixture to the pan and flatten softly with a fork.
8. Cook for 4-5 minutes on each side, turning with a spatula.
9. Remove hash browns from pan onto a plate.
Can be served as a snack or part of main meal.
