Sweet Potato, Spinach and Cheese Grilled Sandwich (with Cheaters Aioli)

Ingredients

Sandwich

1 small sweet potato, sliced into thin slices
4 slices sourdough bread
Small amount of butter or olive oil
1/3 cup grated cheese
Baby spinach

Cheaters Aioli

1 tablespoon mayonnaise
1/4 teaspoon garlic powder
1/2 teaspoon lemon juice

Combine mayonnaise, lemon juice and garlic

 Method

1. Microwave Method sweet potato– Add the sweet potato slices to a shallow bowl, with a little water and drop of olive at the bottom. Mix around to coat the sweet potato. Microwave for 5-6 minutes, or until the sweet potato is soft.

2. Make the aioli. Combine the mayonnaise, garlic powder, lemon juice, and salt, in  bowl.

3, Butter or scrape olive oil onto sliced bread.

4. Add cooked sweet potato and baby spinach to the aioli. Mix about in bowl to coat in aioli.

5. Assemble sandwich. Place sweet potato, spinach and top with cheese and other bread slice. 

6. Heat small amount of olive oil in large non-stick frypan over medium heat and grill sandwiches for 2-4 minutes on each side until toasted and cheese is melted.
