Hash Brown Veggie Omelette For Two


Ingredients

1/2 cup of grated potato
1/2 cup grated carrot
2 beaten eggs
3 tablespoons of grated cheese
1/2 teaspoon of dried thyme
olive oil
Salt and pepper to taste


Method

1. Grate potato and carrot and then squeeze out excess moisture and add to a bowl, with cheese, eggs, herbs and seasonings. Mix together.
2. Heat about a teaspoon of olive oil in non-stick pan.
3. Put egg mixture into frypan and shape into a round flat patty.
4. Cook patty for a few minutes over medium heat and then turn over.

Cut in half and serve hot.
