Apricot and Almond Cake (no fat) |
Ingredients
1 1/2 cups of plain flour
50g almond meal
2 eggs
1/2 cup of milk
3/4 cup of sugar
2 tsp baking powder
700g of apricot slices in natural juice, drained.
1 tsp vanilla
Method
1. In a large bowl, combine eggs, milk, sugar, flour, baking powder and vanilla.
2.Add the drained apricot slices and fold in with spoon.
3. Grease a springform pan with butter and pour the cake mixture in. Top with almond meal. (and some half almonds if you wish)
4. Cook in oven at 180 Celsius (356 Fahrenheit).
5. Allow to cool in the tin for 10 minutes, before removing.

* The reason for the springform pan with removable sides is because the cake you are baking can't be inverted onto a wire rack, due to topping.
