Baked Bean and Cheese Quesadillas

Ingredients

8 flour tortillas

425g can of baked beans in tomato sauce
        
1 cup grated tasty cheese
 
2/3 cup mild chunky salsa sauce

1 tsp olive oil 

1 avocado, mashed (to serve)

Method

1. Place tortillas on a plate. Spoon baked beans over one half of each tortilla. 

2. Sprinkle cheese over beans, then add salsa. Fold tortilla over filling.

3. Cook tortillas, 2 at a time, for about 2 minutes on each side, until filling has heated through and cheese melted. 

4. Repeat with remaining tortillas.

Serves 4

Cut tortillas into wedges and serve with avocado. Can add pepper for a spicier taste.
