Ingredients
1cup dry lentils
4 cups of stock or water
2 cups peeled and chopped sweet potato
1/2 cup chopped carrot
1 small chopped onion
1/2 cup chopped celery
2 tablespoons olive oil
1/2 teaspoon dried turmeric
1/2 tsp garlic powder
1 cup of baby spinach leaves
1bay leaf

Method
1. Heat olive oil over medium heat in a heavy bottom saucepan.
2. Add chopped onion, and saute until onions become translucent.
4. Add turmeric, garlic powder, and pepper and stir.
5. Add chopped carrots, celery and lentils and mix together.
6. Pour in stock or water.
7. Add the sweet potatoes and bay leaf and stir to combine.
8. Simmer over medium to low heat until lentils and sweet potatoes are soft - about 40 minutes.
9. Add the baby spinach and cook for about 5-7 minutes.
Serve with seeded bread.
