Ingredients
1 can (400ml) of cannellini beans, drained.
250 g of pasta of choice
400 ml of canned tomatoes
5 basil leaves
1 onion, chopped
1 garlic clove, minced (or garlic powder)
olive oil
Pepper
Parmesan cheese
Method
1. Add a small amount of olive oil to a frypan and cook onion and garlic over medium heat, until translucent.
2. Add in the beans and basil, and cook for another 5 minutes.
3. Meanwhile, add pasta to a saucepan of boiling water and cook until al dente.
4. Add canned tomatoes to the pan of onions and beans and stir in. Add a small amount of water if sauce is too thick.
5. Add pepper
6. Leave to simmer for 10 minutes with a lid.
7. Then mix the pasta with the sauce and serve with Parmesan cheese.
Note: A dash of cream can be added toward the end for a creamer sauce.
