Fruit Cake With 3 Ingredients |
Ingredients
1 kg mixed dried fruit
2 1/2 cups cold coffee or tea (no milk)
2 cups self-raising flour
Method
1. Put the dried fruit into a small saucepan and the add 2 cups of the coffee or tea.
2. Bring the mixture to the boil and simmer for 3 minutes. Allow to cool and soak for at least 2 hours
3. Preheat the oven to 160 degrees Celsius. Line a 20cm round cake tin with waxed baking paper.
4. Sift the flour into the fruit and stir to combine. If the mixture is too dry, add the remaining coffee/tea.
5. Pour the mixture into the lined tin and bake for 2 hours on the middle or lowest shelf.
6. Cool completely before removing from tin and slicing.
7. Store for up to one week in an air tight container.
