Spicy Chickpea Spaghetti |
Ingredients
1 packet of spaghetti (about 500g)
About 3 cups of drained canned chickpeas
1 medium onion chopped
1 bottle of Arrabbiata Sauce (about 400g)
2 tablespoons Parmesan cheese
1 tablespoon olive oil
Method
1. Cook the pasta in a large pot according to the package directions. Drain.
2. Heat the olive oil in a frypan over medium heat. Add the chickpeas to pan and cook until just crispy.
3, Add the onions to the pan and cook until soft
3. Add the Arrabbiata Sauce and simmer for about 10 minutes. (Longer simmering allows the sauce to thicken and intensifies flavour)
Serve chickpeas over spaghetti with Parmesan cheese.
