Chocolate Prune Cake

Ingredients

3/4 cup pitted prunes
1/4 cup boiling water
1 cup buttermilk
2/3 cup canola or sunflower oil
1 cup sugar
2 tablespoons cocoa powder
1 teaspoon vanilla
2 eggs
2 1/2 cups flour
2 1/2 teaspoons baking soda
2 teaspoons baking powder

Method

1. Soak prunes in boiling water 30 minutes. Drain and set aside.

2. In a bowl, combine oil, sugar, cocoa and vanilla. Add eggs
and beat well for 2 minutes. 

3. Put soaked prunes and buttermilk into blender and process finely. 

4. Add prune mixture to oil mixture along with flour, baking soda and baking powder. Beat well.

5. Pour mixture into a baking pan, which is well-greased and floured (13 x 9 x 2 inches, 33 x 23 x 5 cm, 14 cups)

6. Bake cake at 350 °F  for 30 minutes (GM 4), 180°C, (160 °C FF), Or, until skewer comes out clean.

# To flour pan after greasing: Add flour to the pan. Tilt and tap the pan in all directions allowing the flour to lightly coat the sides and bottom.
