Tabbouleh (a Middle Eastern Salad)

Ingredients

¼ cup bulgur wheat (a whole grain made from parboiled, cracked wheat)
1 bunch flat leaf parsley, finely chopped
½ bunch fresh mint leaves, finely chopped
1 large tomato, diced (or halved mini tomatoes)
1 small onion, chopped
¼ cup olive oil
Pepper
pinch of salt
Juice of 1 lemon

Method

1. Place the bulgur wheat in the lemon juice and soak for 15 minutes.
2. When the bulgur wheat is soft, mix all the ingredients together, then add the olive oil last.
3. Toss well.
